Newly harvested truffles are cleaned, trimmed and graded. Truffle Grower supports the United Nations standard for truffle processing, UNECE Standard FFV-53.
This standard has also been adapted by the Australian Truffle Grower’s association to guide growers in labelling their produce.
Once a truffle is harvested, its details are stored and tracked as it is processed and graded:
The truffle’s id is used to match the truffle being processed to its entry in the ‘Ungraded’ list
Processing a truffle involves cleaning, weighing and grading the truffle
Truffles are graded by quality into categories: Extra, Grade 1, Grade 2 and Bits
The amount of truffle discarded is recorded, together with the discard reason
If necessary, a truffle can be split into more than one piece during processing. In this case each piece can be given a seperate grading
